The story
At Restaurant Herr Knillmann in Düsseldorf, owner Bastian Minx channels the hospitality of his grandfather, Paul Knillmann, to lead a kitchen dedicated to honest modern German cuisine. Paul, a master butcher who lived to 101, believed tables should always be big enough for family and friends, a value Minx carries forward at their Gerresheim location. The cooking rejects pre-made shortcuts, keeping the convenience share below five percent while sourcing vegetables three times weekly from Chef's Culinar and meats from local Metzgerei Ludwig. This commitment to quality extends to the seafood selection, as the team removed tuna from the menu in 2021 and now serves only freshwater fish.
The menu balances classic cuts with creative sides, featuring Wiener Schnitzel served with roast potatoes and lingonberries alongside a Jägerschnitzel finished with forest mushroom sauce. Meat enthusiasts often choose the rump steak with red wine jus or the local Düsseldorfer Senfschnitzel, while plant-based diners turn to the Knillmann Bowl packed with beluga lentils and courgette noodles. These German dishes extend to lighter bites like the original Flammkuchen with speck and onion, which shifts to seasonal chanterelles during autumn. Sweet endings include a New York cheesecake with wild berry sauce and the Knillmann's Cheese Duo, combining caramelized goat cheese with aged parmesan.
The beverage program emphasizes homemade touches, offering lemonades in basil, wild berry, and lemon mint flavors alongside a wide range of aperitifs like Hugo spritz and Negroni. Local brews such as Bolten Alt pair well with a cellar that includes Sangiovese from Brunello di Montalcino and crisp whites like Riesling from Schloss Johannisberg. This liquid variety supports the room's atmosphere, which Minx describes as having a hard shell but a soft core. The dining space encourages laughter and conversation, reflecting the family ethos behind the name. On sunny days, the setting expands to an outdoor terrace where guests can dine beneath the shade of trees, reinforcing the restaurant's role as a welcoming neighborhood anchor.
