The story
Naniwa Sushi & More in Düsseldorf opened its doors in 2004 with a clear objective within Japanese cooking. The founders set out to bridge traditional techniques with familiar European sensibilities. This early experiment evolved into what they now call Nouvelle Cuisine Japonaise, earning a 1,5 Kochlöffel recognition from the Schlemmer Atlas for its balanced approach. Today, more than seventy menu creations reflect that original cross-cultural intention.
The menu highlights precise cuts of raw fish alongside cooked preparations that avoid heavy sauces. Guests frequently order the Sashimi Mori, which layers tuna, yellowtail, scallop, and sea bass on a single platter. Fried components like the Ebi Tempura and the crispy Tiger Roll provide textural contrast to delicate nigiri such as Negitoro and Ikura. Teriyaki glazes appear on both salmon and chicken, offering a familiar sweetness without masking the primary proteins.
Dining here follows a deliberate pace rather than rapid turnover. The layout accommodates both quick lunch visits and extended evening meals across the week.
