De Goei Goesting has anchored its French-Belgian-Mediterranean kitchen on Zuivelmarkt in Hasselt for more than twenty years under the direction of Dirk Hendrickx and Fabienne Cuypers. The menu rotates quarterly, relying on clean techniques and honest ingredients rather than heavy sauces or decorative flourishes. That consistent focus on product quality secured a twelve out of twenty assessment from Gault & Millau in their 2026 edition. Guests encounter a working bistro model where seasonal shifts dictate the daily offerings.

Plates built for sharing

The dining room centres around small degustation plates designed for the table rather than individual plating. Current highlights include polder potatoes paired with grey North Sea prawns, a creamy hollandaise, and a sharp note of sour cream. Another reliable favourite features perfectly crisped bread topped with a generous mound of crab salad, fresh herbs, and a touch of citrus. This approach to French-Belgian-Mediterranean cuisine rewards slower tasting alongside an extensive wine list featuring Burgundy selections.

Space adapted for lingering

The main dining area received a complete refresh in 2017, creating a layout that balances quick lunches with longer evening sessions. Large glass doors open onto a covered terrace where patrons often stay for hours during warmer months. A separate function space named Piazza accommodates private gatherings and corporate events for up to forty-five guests. The venue operates daily from morning coffee through late dinner, extending its reach with weekend breakfast service and afternoon high tea.
